Chocolate and hazelnut cookies

I’ve been baking. I’ve got a busy week at work coming up and so I’ve decided to make some treats to help me power through the 3.30pm energy dip each day.

Here’s my recipe for chocolate nutty cookies….


To make 16, you will need:

130g butter

75g golden caster sugar

75g dark soft brown sugar

1 egg

½ tsp of vanilla extract

200g plain flour

½ tsp salt

½ tsp bicarbonate of soda

60g hazelnuts

60g chocolate chips

Cream together the softened butter and both types of sugar until well mixed.  Add the egg and the vanilla extract.

Sift the flour, salt and bicarbonate of soda into the mixture.  It should form a soft wet dough.

Place the hazelnuts in a small bag and crush with a rolling pin or the flat side of a knife to break them up.  Ideally, the hazelnuts should be in quarters – no larger than that.

Add to the dough mixture, along with the chocolate chips and mix well so that the new ingredients are evenly distributed.

Roll into a ball and wrap in clingfilm.  Leave in the fridge for an hour.

Preheat the oven to 170 degrees C and grease baking sheets.  Take the cookie dough out of the fridge, unwrap and separate into 16 even pieces.  Roll each piece into a ball, place on the baking sheet and flatten until 1 cm thick with your hands. Bake in the oven for 10 minutes.


Once ready (they should brown very slightly), take them out of the oven and leave them on the tray for another ten minutes. Then place on a wire rack to cool.
